Rambler, the electric new underground bar-within-a-bar opens this evening (September 25) — a cocktail oasis hidden beneath 8th Avenue South’s Sutler Saloon and beside Melrose Billiard Parlor.
Owned by Austin Ray of A.Ray Hospitality, and Joe Parkes, Jr., David Parkes, and Gary Parkes of The Parkes Companies, the underground cocktail bar at 2600 8th Avenue South offers well-made cocktails that patrons “won’t need a dictionary to understand.” A selection of three-ingredient cocktails proves that sometimes simpler is better, and consulting bartender extraordinaire Freddy Schwenk’s other contributions are modern interpretations of classics like the haymaker — a play on an old fashioned made with amaro, banana, and cacao.
The bar menu from Von Elrod’s Jason Brumm has eight snacking options — from a bar mix with house cheetos, to parmesan tater tots, goat cheese fundido, and crab rangoon. There’s just one sweet option — a warm butter pecan skillet cookie.
Rambler’s hours are Tuesday through Thursday, 5 p.m. to midnight, then Friday and Saturday from 5 p.m. until 2 a.m.
Weekday Happy Hour is Tuesday – Friday, 5-7 p.m. with select $8 cocktails, $7 wines by the glass, and $5 draft beer. Rambler’s WeDrink Wednesdays from 5-10 p.m. offers eight signature cocktails for $8 (normally $13).
